Select a folder then press the plus button next to "Persons" and type in a name. Alternatively you can use the "import contact" button to quickly add a person from your contact list.

You will need to allow acces to your contact list. Your contacts are never sent to any server or saved anywhere else. Just the name from your selected contact is used.
